Orange Poppyseed Dressing

Orange and poppy cake is always a favourite in my family. Luckily this well loved sweet flavour profile also works wonderfully in a savoury context so you can enjoy it much more frequently! It makes a delicious salad dressing that brings a sweet zing to your salad or veggies (tastes amazing with beans and broccoli) and is super simple to make.

Orange Poppyseed Dressing
Makes 4 serves
1 tbsp orange zest (zest of 1 orange)
1 cup orange juice (Juice of 1 orange)
1 tbsp poppy seeds
2 tbsp orange balsamic vinegar (I'm sure regular would work too)
1/8 tsp aesofatida (a little crushed garlic would also work)
  • Zest orange
  • Juice orange
  • Combine ingredients
  • Dress salad
  • Enjoy!
  • This keeps well in the fridge for a week +
There are so many delicious low fat salad dressings to choose from you can always dress up your salads and enjoy every bite.

Super Purple/Green Thick-shake

This thick-shake definitely lives up to its name. It is seriously thick- the straw sands up in it it's so dense! The sweet, 'creamy' concoction has a hint of chocolate but the fruity blueberries and banana take pride of place. I may have snuck lots of greens in to boost it's nutrient value but you would never know, it tastes divine.


Super Purple/Green Thick-shake
Makes 2 serves
1/4 cup raw cashew nuts
4 cups fresh baby spinach (or 250g frozen)
1 cup blueberries
1 frozen banana
2 cups water
3 tbsp carob
Vanilla Stevia to taste (or any sweetener you desire)
  • Soak cashews for as long as is convenient
  • Add cashews and water to blender
  • Blend until smooth 
  • Add the remaining ingredients
  • Blend well
  • Adjust sweetness to taste
  • Enjoy!
Are you a green smoothie person? Do you down delicious green monsters regularly? 
I'm not sure if I am (yet?)- I think I prefer my veggie juices and my smoothies sweet and decadent, luckily this one covers that so I loved it! I think it has a lot to do with how powerful your blender is though, I have a feeling if it was completely smooth it might win me over... ah well, until I'm blessed with a blendtec or vitamix I shall keep using my trusty sunbeam. Strawberry and Kale Salad

I love salads but not just any salads, they've got to be good! For me they have to be packed full of flavour and delicious ingredients. I can completely understand why people think salads are boring when they've only ever had the traditional green side salad... even with a nice vinaigrette it gets old pretty quickly.

This fresh, juicy, sweet, tangy salad is jam packed with goodness. Each bite delivers the juicy sweetness of the strawberries with the crunch of leaves and tang of vinegar complimented perfectly by the cracked black pepper- if it sounds crazy to you just give it a go- its lovely. 

Strawberry and Kale Salad
Apologies for the phone photos, they don't do it justice!
1 x 250g punnet of Strawberries
1 large bunch Kale
6 mini Capsicums (assorted colours)
Raspberry Vinegar to taste (approx 1 tbsp)
Cracked Black pepper to taste
  • De-stem kale and chop finely
  • Massage kale (like dough) until it softens and loses some volume
  • De-seed and chop capsicums finely
  • Remove the tops and chop strawberries into bite sized pieces
  • Combine well
  • Dress with vinegar and pepper to taste
  • Enjoy!

Sunshine 'Yoghurt' & Frozen 'Yoghurt'

This mouthful of sunshine is a delicious nut based fruity 'yoghurt'. Thick, sweet and 'creamy' the fruity coconut orange flavour is just divine. If you're more of a berry person check out my raspberry 'yoghurt' recipe or try any fruit you like! (let me know which ones work well?)


This raw vegan 'yoghurt' is the texture of traditional thick yoghurt but can be thinned out to your desired consistency to be enjoyed alone, with cereal, as a frozen dessert, as a fruit 'cream' along baked goods or used as an ingredient.


Sunshine 'Yoghurt'

1 cup raw cashew nuts
1 cup coconut water
3 oranges
Optional
Stevia to taste
  • Soak nuts in coconut water to soften
  • Peel oranges
  • Blend ingredients to a smooth consistency (if you don't have a high speed blender this will take longer than you think)
  • Adjust sweetness to taste
  • Leave to set in the fridge for an hour
  • Enjoy!

and for it's yummy frozen counterpart...just pop it in the freezer!

 Sunshine Frozen 'Yoghurt'
1 cup raw cashew nuts
1 cup coconut water
3 oranges
Optional
Stevia to taste
  • Soak nuts in coconut water to soften
  • Peel oranges
  • Blend ingredients to a smooth consistency (if you don't have a high speed blender this will take longer than you think)
  • Adjust sweetness to taste
  • Freeze for a minimum of 2 hrs (it will get darker and more intense in colour)
  • Enjoy!
