Vegan MoFo 9- The Happy Herbivore- Cheater Pad Thai

Today's recipe come from The Happy Herbivore (pg 117). His and hers cheater pad thai. I was testing out new noodles with this recipe but it will work with all of them. I switched up the quantities, add more peanut butter, used fresh garlic instead of ground, added more veggies (capsicum, carrot, kale) used fresh chili instead of chili sauce, omitted spring onions on mine etc. The integrity of the dish remains but my version with stacks of veggies and fresh ginger and chili is wonderfully yummy. Just try it and see!

Cheater Pad Thai
Lindsay's Version:
Serves 2
1/4lb thick rice noodles
2 tbsp soy sauce
1 tbsp smooth peanut butter
1 tbsp sweet red chili Asian sauce
1/4 tsp granulated garlic powder
1/4 tsp ground ginger
1/4 tsp hot sauce
3oz beansprouts

Claire's Version:
Serves 2
1/4lb thick rice noodles 2 x 250g Packets of fettucini Slim Me Noodles (or any other noodles you desire, bean noodls)
3oz beansprouts
1 carrot, sliced into matchsticks
3 large kale leaves
1/2 capsicum
Cashew Nuts (Optional)

2 4 tbsp soy sauce
1 tbsp smooth 4 tbsp organic crunchy peanut butter
1/2 cup hot water
1 tbsp sweet red chili Asian sauce Sriracha Sauce+ Stevia to taste
1/4 tsp granulated garlic powder asafoetida
1/4 tsp ground ginger 1 tbsp freshly grated ginger
1/4 tsp hot sauce fresh red chili

Green section of a spring onion
1/4 cup Tempeh/Tofu
1/2 cup Cashew nuts
Fresh coriander
  • Cut veggies (remembering to de-stem and massage kale)
  • Combine all sauce ingredients until smooth
  • Cook noodles according to packet instructions (2 mins in boiling water)
  • Combine all ingredients in sauce, making sure to coat evenly
  • Enjoy!
Hope you enjoyed seeing how I can't stick to recipes for the life of me- even when the originals are delicious and vegan I still manage to tweak them to my specific desires and make them even more fantastic.
