Vegan MoFo 3- Jamie Oliver's 30 Minute Meals- Sweet Mint Sauce and Fruit


Today's offering is from Jamie's 30 Minute Meals, pg 112. I love Jamie Oliver as you now well know.. but this is the last one from 30 minute meals.

I tweaked his dessert recipe to omit the sugar and changed it from a flavoured mint sugar that you sprinkle over the fruit to a sweet mint sauce that you drizzle over the fruit. Simple, quick and super yummy! Plus it keeps really well in the fridge for ages, great to have on hand to spice up desserts.
Jamie's Ingredients:
Fruit and Mint Sugar
1 large pineapple
150g blueberries or other soft fruits
Small bunch of fresh mint
2 tbsp golden caster sugar
1 lime
250g yoghurt

Claire's Version:
Sweet Mint Sauce and Fruit
 Hers: Grapes, strawberries, pineapple
His: Apple, Pear and Coyo (coconut yoghurt)
1 large pineapple
150g blueberries or other soft fruits As you can see above, I just used the fruits we each liked best- it tastes great with everything!
Small bunch of fresh mint
2 tbsp golden caster sugar Stevia to taste- I used about 20
Juice of 1 lime
250g 125g coconut yoghurt
  • Wash and chop fruit into bit sized chunks
  • Wash mint and pick leaves
  • Juice lime
  • Blend mint leaves, lime juice, stevia until smooth
  • Drizzle over fruit
  • Serve alone or with coyo
  • Enjoy!

I really like sprinkling cinnamon over my bananas and apples, or eating them with almond butter mmmm and I have a thing for pineapple with vinegar and cayenne pepper (I know it sounds crazy but it taste amazing and is addictive, if you like vinegar you must try it!) What do you like on your fruit?
