Vegan MoFo 2- Jamie Oliver's 30 Minute Meals- Satay Tofu Skewers


Hope you're all enjoying Vegan MoFo so far! The cookbook theme continues today with Jamie O again- it's a continuation of yesterdays satay feast...

Today's offering is from Jamie's 30 Minute Meals, pg 112. Again, this meal is delicious, the quick and easy satay sauce is a little unusual but fresh super yummy. Obviously I changed the chicken and turned yesterdays salad into a veggie plate- it's a wonderful meal. You know you love satay, give it a go!
Jamie's Menu:
Chicken Skewers
4 x 180g Chicken breasts
Honey
olive oil
extra virgin olive oil
salt/pepper

Amazing Satay Sauce
1/2 bunch coriander
1 red chilli
1/2 clove garlic
3 heaped tbsp crunchy peanut butter
soy sauce
2cm fresh ginger
2 limes
Claire's Version:
Satay Tofu Skewers
Makes 4 serves
4 x 180g Chicken breasts 1 large packet Firm Tofu
Honey
olive oil
extra virgin olive oil
salt/pepper
1/2 quantity of satay sauce (recipe below)
  • Press tofu for 8 hrs (or as long as you have)
  • Freeze tofu
  • Thaw tofu
  • Press tofu for another 4 hrs (or as long as you have)- I usually do these steps ahead of time, it's handy to have in the fridge/freezer
  • Cut tofu into bite-sized cubes- but not too small or they will split!
  • Skewer tofu cubes
  • Dry fry tofu until golden and warmed through
  • Coat in sauce (recipe below)
  • Grill or dry fry to warm sauce (be warned it's messy)

Satay Sauce
Makes 8 serves
1/2 1 bunch coriander
1 red chilli
1/2 clove garlic
3 heaped tbsp crunchy peanut butter
soy sauce
2cm fresh ginger
2 limes
Splash of water
  • Zest and juice limes
  • Wash coriander well
  • Peel ginger, garlic and de-stem chilli
  • Combine all ingredients in blender
  • Pulse to chop then blend well to combine to a smooth paste
  • Enjoy!
  • (use half for satay tofu skewers and half for Firey Satay 'Noodle' Salad)

As you can see I served the satay skewers with yesterday's fiery vegetable noodle salad and they went down a treat. Hope you're enjoying Vegan MoFo so far!
