Vegan MoFo 12- Fast, Fresh, Simple- Coconut Salad


Today's yummy recipe comes from Donna Hay's Fast Fresh Simple (pg 39). This cold noodle salad is deliciously flavourful while being super healthy. I altered the recipe to use fresh young coconut flesh instead of coconut milk and veganised it by replaced the fish sauce with tamari and dulse flakes, omitted the onions and chicken but if you'd like a little more protein in this meal just add some tofu and nuts. I just love how herb packed this salad is, instead of being decadent and creamy with the coconut it's fresh, light and herby. It's great, give it a go!

Coconut Salad
His and hers coconut salads- one spicy and one with extra veggies
Donna's Version:
150g flat rice noodles
2 x 200g cooked chicken breasts, sliced
2 long red chilies
4 shredded kaffir lime leaves
3 green onions
1/2 cup coriander leaves
1/2 cup mint leaves
1/2 cup basil leaves
Coconut Milk Dressing
1/2 cup coconut milk
1 tbsp fish sauce
2 tbsp lime juice
1 tbsp caster sugar
Claire's Version:
150g flat rice noodles Slim Me Noodles (or brown rice noodles, bean noodles etc)
2 x 200g cooked chicken breasts, sliced (You could add tofu or nuts)
2 long red chilies
4 shredded kaffir lime leaves
3 green onions
1/2 cup coriander leaves
1/2 cup mint leaves
1/2 cup basil leaves
1/2 cup cucumber
1 cup kale (massaged)
1 cup bean shoots
1 cup lettuce

Coconut Milk Dressing
1/2 cup coconut milk Young green coconut flesh
1 tbsp fish sauce tamari + 1 tsp dulse flakes
2 tbsp lime juice
1 tbsp caster sugar Stevia to taste
  • Make dressing by opening coconut and removing the young tender coconut flesh
  • Blend coconut flesh with tamari, dulse flakes, lime and stevia
  • Slice chilies (leave seeds in or remove based on how hot you like it)
  • Shred kaffir lime leaves finely
  • Wash and roughly chop coriander, mint, basil, cucumber, kale, bean shoots and lettuce
  • Cook noodles according to packet instructions and leave to cool
  • Combine noodles, vegetables, herbs and coconut dressing
  • Enjoy!
