Vegan MoFo 14- What are tapioca pearls? sago?

What are tapioca pearls?
Pearls are small gelatinous balls of tapioca starch. You buy them dried in either dark or multicolours and cook them until they rehydrate and become soft then add them to drinks or desserts. Their texture is somewhat unique- a friend once described it as 'mankey banana' when surprised by it is a sip of tea! but I think it's more chewy than that.
Most often you'll see pearls in Bubble Tea like this
Sago from a different plant but is pretty much a smaller version of pearls. It's used in Asian desserts like this sago pink coconut jelly slice and sago pudding...
I hope you're not too surprised by pearls any more- they're really quite yummy and make a nice occasional treat.
