Blackberry & Apple Muffins with 'Creamy' Cacao Almond Icing

Last year I made teeny tiny chocolate baby cakes with strawberry icing, this year I went with huge blackberry + apple muffins with cacao almond icing! Yum yum yum.

I used Katie's single lady blueberry muffin recipe but tweaked it to make it an apple and blackberry muffin...and gluten, fat and sugar free of course. I loved it, I under-baked to make sure it wasn't dry and the intensely sweet 'creamy' icing was most definitely a winner.
Creamy Cacao + Almond Icing
 
Makes 6 serves
1 cup cooked chickpeas
2 tbsp almond butter
stevia to taste (I think I used 30 drops)
1/2-1 tsp vanilla paste/extract
1/4 cup cacao powder
1/8 cup warm water
  • cook chickpeas (I always have some in the fridge/freezer)
  • combine ingredients in food processor
  • pulse to chop chickpeas well
  • blend while drizzling in liquids (water/stevia)
  • blend for 1 more minute even when you think it's done to get it perfectly smooth
  • ice muffins/cakes/eat with fruit
  • enjoy!

  2. Ooh, I have made Katie's recipe a bunch of times. :) I love it! Actually, a couple nights ago we made them - chocolate chip for N, sprinkle for A, and applesauce/cinnamon for me.

    They always turn out great!

  5. Hi Claire! Just fell upon your awesome blog last night. I was vegan for three years, then went vegetarian for 6 months until a month ago. My doctor convinced me to eat meat because my iron was so low. (I was terrible with vitamins, and wasnt exactly a "healthy vegan/veggie" if you know what I mean- lots of refined wheat and sugar) Well, after eating meat for ONE MONTH i gained 5 pounds!! Going back vegan/veggie now. This is what always kept me slim and I am a firm believer in this way of living. This time around I will be a "healthy" veggie with all my supplments diligently. Your blog is great and I can't wait to try all your recipes and read your success to keep me inspired. Happy Birthday!!
