'Cheezy' Slim Me Noodles with Peas & Broccoli

Not counting calories makes food taste better. So does eating with your fingers but that gets a tad messy. I think you focus more on what you're eating too, as opposed to what you can eat and how many calories it's costing you. I'm liking this decision to stop counting, it's freeing. Scary but freeing. 

Thank you guys so much for your comments when I've been a tad crazy lately. They've really helped keep my head on straight and a smile on my face. All the Christmas drama has kept going and is getting to me more than I care to admit. It's even managed to mess up my cycle (I never even knew that was possible!) How bizarre. How annoying. Oh well, food time :)

I love peas, I hadn't been eating peas because they were high in sugar and higher GI. They're a yummy pulse/veggie that's good for you so they're making a reappearance.

'Cheezy' Slim Me Noodles with Peas and Broccoli
1 packet slim me noodles
1 cup chopped broccoli
1 cup frozen peas
1/3 quantity of Lindsay's Grilled Cheeze Sandwich cheeze as sauce (Everyday Happy Herbivore pg 78)
  • chop veggies
  • cook sauce (works well if your other half is having grilled cheeze sandwiches!)
  • cook veggies
  • heat pasta for 2 mins
  • combine ingredients- the water from the pasta will loosen up the sauce
  • serve and enjoy!
This wasn't the best idea FODMAPs wise but it tasted so good it was worth it. It was good for my mind and heart if not perfect for my tum. Next time I might have half the serve of slim pasta and broccoli OR peas not both. I'm getting there, my stomach's getting there but it still has its limits- namely too many lentils/beans or too much fibre (the slim pasta is pretty much all fibre that's why it's only 13 calories!) The low FODMAPs diet has been a life saver for me so if you're thinking about giving it a go I highly recommend it- remember the elimination phase is only short term- you can work out what you can eat as you add things back in and balance it out after that.

  1. I love eating with my fingers when I can :) and cooking with them too - like snapping things instead of chopping and mixing cakes by hand, not with the blender - because it feels more natural and more like I made it :)

  3. What a great idea for the sauce! I have to put that recipe on the list. Peas in pasta is so good!
